About The Loyal
The Loyal is Restaurateur & Michelin-starred Chef John Fraser’s signature West Village brasserie, inspired by the high energy of downtown Manhattan and the romance of European bistros.
Since opening in 2017, The Loyal has became a neighborhood institution. The menu is designed for comfort and indulgence, elevated by John Fraser’s signature technique and passion for seasonal produce. Dishes are seasonal, shareable and highly flavorful. The menu changes seasonally, but regulars know they can depend on finding favorites like the ½ pound Piedmontese burger, decadent Sundae Set & Candy shop and late night fried chicken sandwich year-round.
Beverage Director & Advanced Sommelier Amy Racine directs The Loyal’s wine & cocktail program, which serves innovative cocktails with a cheeky twist and an adventurous wine list laced with surprises.
Chef John Fraser
Restaurateur & Michelin-starred Chef John Fraser is a culinary trailblazer, best known for redefining the role of vegetables in American cuisine from imaginative fine dining restaurants to nostalgic neighborhood brasseries.
John’s restaurant group, JF Restaurants, is behind some of New York City’s most exciting restaurants, including Times Square’s first & only fine dining restaurant, 701West, Ardor in West Hollywood and his signature neighborhood brasserie, The Loyal in West Village.
Born & raised in Los Angeles, John still draws inspiration from the nostalgia of neighborhood bars and comfort food he grew up around in California. He refined his fine dining expertise under the mentorship of Thomas Keller at The French Laundry in the Napa Valley, before moving abroad to Paris to work at the revered fine dining restaurants Taillevent and Maison Blanche.
A dream to create the entire guest experience, from food, to wine, to service and ambience, led John to move beyond the kitchen and into entire restaurants. JF Restaurants is a collaborative, creative hospitality group based in New York City, with projects across the country.
